There are descriptions of what the blocks are and what they were designed to do as well as more technical descriptions which are helpful to know the detail when it's relevant. When you start your project, Gravitate will help you to pick and choose what blocks will be relevant to your project. You can also commission custom blocks, and if another Site Maker project creates new blocks those will become available for you to add to yours as well.

Very easy! All Site Maker websites have a Content Management System (CMS). Content Management Systems are made to help website owners and administrators to add and edit content by logging into a secure area. You will be able to add and edit articles with text, video and images, add people to a people listing and change the order of items among other things. Exactly what you can do will depend on your specific site and project, but you should expect to be able to make day-to-day content updates easily and without extra costs.

The website is yours and will be publicly available once it's live for as long as you pay for hosting with Gravitate. You will have your own site and CMS (Content Management System) seperate from any other site. All your content is owned by you under standard NZ copyright. If you want to move your website elsewhere for another company to host, Gravitate will allow that but it will take some work. Note that web service providers very rarely support another organisation's work.
